Steps to make to make Tiramisú

  1. Primero preparo el sambayon.. a baño María coloco azúcar y las yemas y bato hasta que espese.. hasta que toque con el dedo y queme.. esto es para pasteurizar el huevo.. una vez que logro este punto lo paso a una batidora hasta que blanquee un poco..
  2. En un bowls bato a medio punto la crema de leche.. agrego los quesos e integro.. y agrego todo esto al sambayon que tengo en la batidora más dos cucharaditas de esencia de vainilla.. y bato por unos minutos hasta que se integre bien toda la crema.
  3. Disuelvo la gelatina en 20 cc de agua y llevo a un baño María por unos minutos hasta que se disuelva bien.. agrego dos cucharadas de crema en la gelatina para equiparar temperatura y luego agrego esto a la crema de una sola vez y bato enérgicamente y reservo la crema de queso.
  4. Para el almíbar de café.. pongo en una olla azúcar y agua y llevo al fuego sin revolver hhasta que hierva.. preparo una taza de café batido con agua caliente.. una vez que hierve el almíbar apago el fuego y agrego la taza de café caliente.. espero a que enfríe y agrego la medida de licor.
  5. Para el armado.. voy mojando las vainillas en el almíbar de café y colocándolas en una fuente de vidrio formando la primer capa.. por encima agrego la crema de queso y espolvoreo con cacao amargo.. luego otra capa de vainillas previamente mojadas en el almíbar.. vuelvo a poner otra capa de la crema de queso
  6. Termino espolvoreando cacao amargo.. podés agregar chocolate rallado y chips de chocolate.. y a enfriar con un día de anticipación queda súper.. una delicia!!!!
