- 6 huevos
- 450 ml café aprox
- 500 g queso mascarpone
- 100 g azúcar
- 2 o 3 cucharadas de brandy, Amaretto o Marsala
- Chocolate negro puro en polvo para espolvorear
- Chocolate negro finamente rallado (opcional)

- Hacemos el café y dejamos enfriar. Mezclamos el café con el brandy.
- En un cuenco amplio batimos las claras a punto de nieve con la mitad del azúcar.
- En otro cuenco se baten las yemas con el resto del azúcar hasta que comience a formar espuma.
- Añadimos poco a poco a las yemas el queso mascarpone y vamos mezclando todo con movimientos envolventes.
- Se añaden al conjunto las claras que previamente habíamos montado. (Si queremos que quede más consistente podemos dejar la mezcla un rato en el frigorífico).
- Echamos el café en un recipiente hondo y vamos empapando los bizcochos por los dos lados.
- En una fuente rectangular, vamos colocando la primera capa de bizcochos hasta cubrir toda la superficie.
- Cubrimos los bizcochos con la crema de mascarpone. Opcionalmente podríamos espolvorear con chocolate negro finamente rallado.
- Volvemos a colocar una capa de bizcochos, los volvemos a bañar con el café y los cubrimos con crema mascarpone.
- Dejar enfriar en el frigorífico un mínimo de 6 horas, quedando aún mejor de un día para otro.
- Una hora antes de servirlo, espolvoreamos el cacao puro en polvo con un colador.
- También se puede congelar y sacar de la nevera unas 3 horas antes de comerlo. Si lo vamos a congelar, es mejor espolvorear el cacao después de descongelarlo.
