  1. Primeramente preparamos el almíbar llevamos al fuego el azúcar el agua (partes iguales) y las cdas soperas de café llevamos a hervor y dejamos que entibie (de ser necesario preparamos más es para mojar las plantillas).
  2. Separamos las yemas de las claras. Llevamos las yemas con la mitad de el azúcar (50grs) a baño María batimos con batidor manual hasta cuando metemos el dedo y notemos que está bien caliente ahí sacamos enseguida (ojo no pasar de calor porque si no se coagulan las yemas) y pasamos a batidora y se bate hasta que las yemas estén a temperatura ambiente.
  3. Mientras seguimos batiendo con la batidora a nivel bajo ir agregando el queso mascarpone (o queso casamcream) hasta que se integre bien y reservamos.
  4. Ahora llevamos a baño María las claras con la otra mitad de azúcar (50grs) batiendo manualmente hasta que cuando metamos el dedo no soportamos la temperatura sacamos enseguida (ojo que no coagulen las claras🤤) y pasamos a batidora velocidad máxima hasta temperatura ambiente(tiene que quedar un merengue bien firme).
  5. Ahora pasamos a unir las yemas con el merengue con una espátula con movimientos envolventes hasta integrar bien.
  6. En una fuente desmontable ir colocando las plantillas de a una remojándolas en el almíbar formando una capa luego le colocamos una capa de crema chocolate rallado otra de plantillas y así sucesivamente hasta terminar con una capa de crema.
  7. Con un cernidor distribuimos el cacao y llevamos al refrigerador por unas cuantas horas si es de un día para otro mejor.
