  2. Separar las claras de las yemas.
  3. En un bowl colocar las yemas, las 12 cucharadas de azúcar, una cucharada del café antes preparado, una cucharada de moscato y una cucharadita de esencia de vainilla.
  4. Mezclar y colocar en un bowl a baño María, sin dejar de batir, hasta que el azúcar se disuelva, la preparación se espese y aclare un poco su color.
  5. Se debe lograr punto cinta, que es cuando dibujamos una cinta con la batidora en la superficie de la mezcla, y ésta se forma fácilmente y permanece en la superficie. Reservar.
  6. Agregar el queso crema y mezclar hasta obtener una mezcla homogénea.
  7. En otro bowl batir la crema de leche a medio punto, es decir, hasta que se espese un poco. Agregarla a la preparación anterior.
  8. Mezclar hasta que la mezcla quede homogénea.
  9. Batir las claras a punto nieve. Si las claras están bien batidas, al dar vuelta el bowl no se caen.
  10. Añadirlas a la mezcla anterior y mezclar con una espátula de forma envolvente para no aplastar las claras batidas.
  11. Probar la crema y si hace falta más sabor a café o a moscato agregarlo de a cucharaditas, evitando cambiar la textura conseguida de la crema.
  12. Colocar el café preparado en un bowl donde podamos remojar las galletitas de vainilla. El café debe estar frío para que las galletitas no se deshagan al remojarlas.
  13. Remojar cada galletita e ir acomodandolas en una fuente. La cantidad de galletitas a usar depende de la fuente que elijas.
  14. Una vez colocada la primera capa de galletitas, colocar una capa de crema. Reservar crema para hacer la capa superior.
  15. Colocar otra capa de galletitas remojadas.
  16. Agregar la última capa de crema y llevar a heladera.
  17. Pasadas unas horas, cuando la crema tenga una consistencia más firme, rallar el chocolate.
  18. Espolvorearlo por toda la superficie del tiramisú y decorar a gusto. Llevar a heladera y retirar al momento de servir.
