  1. Yo he usado Bacalao congelado. Le quito la piel y lo troceo en cuadraditos. Pelo los gambones y le quito la cabeza que deshecho; dos los troceo y los otros dos los dejo enteros para decorar. Pico los espárragos y reservo.
  2. En una sartén (que voy a usar para todo el proceso) salteo un poco el bacalao y los gambones con una cda. de aceite. Retiro y reservo.
  3. Picamos muy pequeño la cebolla, el pimiento y el ajo. Añado a la sartén con 2 cdas. de Aceite y la guindilla. Cuando ya está transparente le añado el tomate rallado. Sofrío un poco, le añado los espárragos y las uvas pasas y el vino blanco y lo dejo hasta que reduzca.
  4. Enseguida añado el azafrán, el pimentón y el caldo. Corrijo de sal y cuando esté hirviendo le añado la pasta de fideuá. Lo tengo el tiempo que manda el fabricante de pasta y remato con los dos gambones que he reservado para decorar y también un poco de cilantro o perejil. Servir con alioli o con limón.
  5. Siempre tengo caldo bien caliente en reserva por si es necesario añadir durante la cocción de la pasta.
  6. De este viaje hice la receta con pasta de Fideuá, pero a mi personalmente me gusta más con pasta fina, del "0" o "cabello de ángel".
  7. El caldo de pescado que uso lo hago previamente con espinas, morralla, etc. y que suelo tener congelado.
