  1. Ponemos a hacer el caldo de verduras. En una cazuela ponemos a cocer con agua, sal y un chorrito de AOVE todos los ingredientes del caldo hasta que tengamos un caldo al gusto

  3. Mientras se hidratan las ñoras vamos picando las verduras para la fideuá,picamos en dados pequeños cebolla, pimiento rojo, calabacín y tomate, laminamos el ajo y los champiñones
  4. En una cazuela baja y ancha apta para el horno ponemos un chorrito de AOVE a fuego medio y pochamos el ajo, la cebolla y el pimiento. Dejamos hasta que empiecen a estar blandos, unos 6-7 minutos
  5. Entonces añadimos el tomate, dejamos 2-3 minutos y añadimos el calabacín. Rehogamos y añadimos los champiñones.
  6. Rehogamos y añadimos los guisantes y dejamos todo junto unos 5 minutos
  7. Mientras, limpiamos las ñoras y reservamos la pulpa
  8. Cuando ya están las verduras añadimos la pulpa de las ñoras, los fideos, la cúrcuma y el colorante, rehogamos de nuevo todo junto y entonces añadimos el caldo de verduras, dejamos cocer hasta que se ha absorbido casi todo el caldo
  9. Precalentamos el horno a 180º, calor arriba y abajo. Cuando esté caliente y se haya absorbido casi todo el caldo metemos la cazuela para que se terminen de secar y se doren los fideos, unos 5 minutos
  10. Servir caliente en la misma cazuela, yo lo he acompañado con un poquito de alioli. Buen provecho!!!!!!!
