    En la sartén, ponemos el aceite que teníamos aromatizado, y pochamos el pimiento rojo, el pimiento verde y la cebolla, que previamente hemos picado fino. Agregamos un poco de sal.
  6. Echamos el tomate picado y un poco de sal.
  7. En un mortero echamos un par de ajos pelados y unas hebras de azafrán y machacarlo bien. Le añadimos unos 50 ml de vino blanco. Echar el ajo machacado al sofrito, y sofreír un par de minutos.
  8. Añadir la sepia, un poco de sal y sofreír. Luego añadimos un par de cucharaditas de carne de pimiento choricero.
  9. Añadimos los fideos, remover todo durante 1 minuto, e incorporar el caldo caliente. La cantidad de caldo es el triple que de pasta. Si queremos que salga algo más caldoso, añadimos algo más de caldo. Ponemos el fuego a tope y cuando empiece a hervir, bajar a la mitad. Probar de sal
  10. Dejamos que hierva durante 7 minutos, e incorporamos los gambones pelados y troceados. Mezclamos. Dejamos unos tres minutos más. Dejamos reposar cuatro minutos más
