  1. Aliñar la costilla con sal y tomillo picado. En una sartén cocinar la costilla hasta dorarla. Añadir el vino blanco cocinar 5 min. Añadir un poquito de agua y cocinar tapado 20 min.
  2. Mientras se nos cocina la costilla, cortamos las salchichas y las freímos con una picada de ajo y perejil y las reservamos.
  3. Ahora en la paellera donde haremos nuestra fideuá, tostaremos los fideos con un poquito de aceite, retiramos de la paellera y reservamos.
  4. Picamos las verduras para nuestro sofrito, en la misma paellera lo podemos hacer, cuando esté hecho podemos triturarlo si lo preferimos. No pongo foto del proceso porque lo suelo tener congelado así luego es mucho más rápido!😁
  5. Ahora mezclamos los fideos y el sofrito en la paellera. Y le añadiremos el caldito que nos ha quedado de las costillas. Lo dejaremos reducir.
  6. El truco para que los fideos queden cocidos pero sueltos que es para mi la gracia de la fideuá son dos, tostar los fideos e ir añadiendo el caldo poco a poco. Añadir y dejar reducir, así hasta que el fideo esté cocido. Yo lo hago en tres veces. Si lo vais dejando tostar más ricos todavía!!
  7. Por último añadimos nuestra costilla y las salchichas con su picadita de ajito y perejil. Y a zampar!!!!🤤🤤
