Cuando estén tostadas nos ayudamos de una espátula y aplastamos las cabezas para sacar todos los jugos. A continuación añadimos la verdura, las espinas/cabezas de merluza y cubrimos de agua. Llevamos a ebullición y dejamos durante 20 minutos manteniendo un hervor muy suave en todo momento. Reservamos.

  3. En una cazuela baja con un poco de aceite tostamos el fideo. Reservamos.
  4. Añadimos los langostinos y la pota troceada y marcamos a fuego fuerte. Reservamos.
  5. Pochamos la verdura. Añadimos el tomate triturado y el pimentón. Cocinamos el conjunto durante 5 minutos.
  6. Añadimos el fideo, incorporamos el fumet y cocinamos 2 minutos a fuego fuerte y el resto de la cocción a fuego medio. Vamos corrigiendo el punto de sal. Faltando 2-3 minutos añadimos el marisco.
