  4. Ahora toca hacer el sofrito. En una sartén añadimos unos dientes de ajo picados. Cuando esté doradito añadimos la cebolla picada y los pimientos. Luego añadimos la sepia.
  5. Mientas se hace el sofrito, podemos ir limpiando los mejillones. En una cazuela añadimos un poco de agua y un poco de vino blanco y cuando esté hirviendo echamos los mejillones y en un par de minutos estarán hechos. Cuando se enfríen los abrimos y les sacamos el bicho. Importante: guardar el líquido con el que los hemos hervido para añadirlo al caldo.
  6. Cuando el fumet esté hecho lo colamos para quedarnos solo con el líquido. Le quitamos al pescado toda la carne que pueda tener para añadírsela después al sofrito. Apartamos las verduras y las cabezas de langostinos para triturarlos.
  7. Para triturarlo todo añadimos también el líquido de los mejillones. Luego lo colamos todo y lo añadimos al caldo.
  8. Cuando el sofrito esté hecho añadimos los fideos y luego el caldo que hemos hecho y dejamos que se haga el fideo. Podemos acompañar al plato con un poco de allioli.
