- 1 cucharadita de postre* maicena (esto es opcional, para espesar la salsa)

- Antes de empezar a cocinar, prepararemos todos los ingredientes, así nos aseguramos para que no se nos olvide nada.
- Ponemos una sartén grande y honda a fuego medio-alto con unas 3 o 4 cucharadas de aceite de oliva.
- Mientras se calienta el aceite picamos en brunoisse (en trocitos pequeños) la cebolla, los dientes de ajo, el apio y echamos todo al aceite ya caliente, sofreímos en la sartén junto con una pizca de sal y el laurel hasta que la cebolla esté blandita y transparente.

- Marcamos en la misma sartén del sofrito los filetes de pechuga y reservamos.

- Echamos en la sartén la aceitunas partidas por la mitad, salteamos, añadimos un chorrito de vinagre, (le da chispa a la receta) el vino, el perejil picado y dejamos que reduzca.

- Ahora agregamos el agua con la maicena diluida, removemos rectificamos de sal, añadimos 1/2 pastilla de caldo de verduras si fuera necesario (a mi no me hizo falta), cocinamos unos 2' y añadimos los filetes que teníamos reservados junto con el jugo que hayan soltado, cocinamos un par de minutos más y listo.

- Ya solo nos queda emplatar, servir calentito y a disfrutar.
